Kale and Apple Sweet Potato Hash
This recipe came about because I often scan the pantry and fridge and start pulling ingredients that I think will go together. Often the meal with change 3 or 4 times while I'm in the process of cooking and this is one of those meals.
My Pantry staples change with the season and because it is fall we have a plethora of sweet potatoes and apples. I make this same recipe a lot for a quick Real-food dinner with little effort and quick cooking time. Have some fun, swap out sweet potatoes and add butternut squash, pumpkin or acorn squash. Try ground lamb instead of ground pork.
Ingredients:
- 1 lb. ground pork
- 2 medium-large sweet potatoes (cubed)
- 1 medium onion, chopped
- 1 large apple, granny smith or fuji are great (cubed)
- 2 large handfuls of kale
- 1/2 cup chicken stock
- 1 tsp. Thyme
- 1tsp. Sage
- 1/2 tsp. salt
Directions:
Brown pork, until almost cooked, add in onions, spices and salt. Add in sweet potatoes, cook for 2 minutes, add apple and chicken stock. Bring to boil, reduce heat to simmer, cover and cook until sweet potatoes and apples are soft. Add kale and cover for an additional 2-3 minutes, just to wilt kale. Stir gently, let cool for a few minutes before serving.
