Spicy Tomato Tomatillo Soup
To me fall and winter equal soup weather and when the there's a slight chill in the air, I get creative in the kitchen. Creating new recipes from old classics is always a fun twist, hope you enjoy this little spicy twist on a classic.
Ingredients:
- 2 cups Tomatillo Salsa (this is my cheater version, get a store brand that has minimum ingredients & little sugar)
- 1 can tomato sauce
- 1 1/2 cups diced potatoes
- 1 cup chopped celery
- 2 cups peeled & diced carrots
- 1 medium onion chopped
- 1-2 garlic cloves, minced
- 1/2 tsp. salt
- 4 cups of chicken or veggie broth
- 1 cup raw cream or organic cream
Directions: Place all ingredients in a stockpot over medium heat. Heat until boiling, stirring occasionally, reduce heat to a simmer and simmer covered for 1 hour. Puree all ingredients until smooth (I prefer my blendtec blender, but for a more chunky version your could also use an immersion blender. Add pureed mixture back into stockpot, add 1 cup of cream and stir until combined.
*Serve with cilantro, tortilla chips, creme fraiche and avocado. If you eat bread, this would pair nicely with Sourdough and Pepper-jack grilled cheese. YUM!!!!!!!!!!!
